Hi Sandy,
couple of ideas:
Sell wall posters with quotes.
Christian quotes could be a good niche.
Quotes by scientists could be a good niche.
Quotes by artists could be a good niche.
(you can also add pictures to the posters).

self publish the book of quotes, and sell it directly to book shops in airports.
The minus point is: without a publisher backing you up, you'll have to give a good deal to the airport book shops though. And you'll have to make it risk free for them. If they don't sell, they can return the books to you.
The plus point is, airports sell a lot of books of quotes. Especially if they are pocket sized books.
